The Christmas Eve menu
This year’s Christmas Eve nibbles include refined croquettes with truffle mousse and a tartlet with smoked trout and lemon cream. No festive menu would be complete without a winter green salad, featuring poached pear, caramelized pecans, and sweet wine vinaigrette. For the main courses, you begin with saffron-crusted sea bass fillet and lemon-scented orzo, followed by beef Wellington fillet accompanied by celeriac purée and cranberry sauce. This time, the amuse-bouche begin with a mini éclair filled with parmesan cream and black truffle, and crispy shrimp bites with lime & chilli mayonnaise. What follows is, of course, lavish, with one cold and one hot starter. Beetroot carpaccio with basil cream and king crab is followed by a velvety, intensely aromatic parsnip soup with caramelized leek and toasted hazelnut. The festive table is then enriched with the green salad of the final night of the year, featuring smoked eel, celeriac chips, and bisque vinaigrette. For the main courses, you start with scallop risotto and AVRUGA caviar, followed by beef fillet in mushroom sauce with dauphinoise potatoes.
And if we agree that December 31 is the one day of the year when champagne is non-negotiable, you can imagine how perfectly a pavlova with red fruits and airy champagne-infused cream works as dessert. The evening’s New Year cocktail also pairs beautifully with the dessert: the Fleur Royale, a festive and well-balanced cocktail.
